Apple, Pistachio & Chocolate Strudel

Apple, Pistachio & Chocolate Strudel is a twist on the traditional Strudel recipe. If you’ve got a sweet tooth or you’re simply craving a treat this weekend, then you need to give this recipe a go.
Ingredients:
For the Pistachio Cream:
- 80g salted butter
- 40g brown sugar
- 1 egg
- 50g ground almonds
- 50g pistachios
For the Apple Filling:
- 4 apples, peeled and cut into chunks
- 1 tbsp.ground cinnamon
- 1 tbsp. brown sugar
- 30g dark chocolate, crushed
- 50g butter, melted
- 20g sugar and crushed pistachios mix
- 4 sheets of filo pastry
Directions:
- Preheat the oven to 190 ̊C / 375 ̊F / gas mark 5.
- Mix the brown sugar and butter together in the Mini Prep Pro.
- Then add the egg and mix thoroughly, before adding in the pistachios and ground almonds and mixing again.
- Set the pistachio cream aside, at room temperature.
- In a bowl, mix together the apples, ground cinnamon and brown sugar.
- Put the apple mixture evenly onto a baking tray and bake in the oven for 10 minutes. Once cooked, set aside to cool. Turn the oven down to 180 ̊C / 350 ̊F / gas mark 4.
- Brush the first sheet of filo pastry with melted butter, then cover this will another sheet of pastry.
- Repeat this until all 4 sheets of pastry have been used.
- Spread the pistachio cream onto the last sheet of pastry and then arrange the apples, in two strips, evenly spaced across the width of the pastry.
- Sprinkle over the crushed chocolate and roll the Strudel across the width of the pastry.
- Brush with some melted butter and sprinkle with the pistachio and sugar mix.
- Bake in the oven for 40 minutes.
