Aubergine Skewers

These Aubergine Skewers are simple to put together and are great for cooking on the BBQ - they are also a great vegetarian option too. Simply serve with a side salad for a quick and easy meal.
Ingredients
- 2 aubergines, thinly sliced
- 1 tbsp. coarse sea salt
- 2 red onions, each segmented into 8 pieces
- 8 skewers
For the Paste:
- 1cm piece cinnamon stick
- 1 tsp. paprika
- 1 tsp. chilli flakes
- 2 garlic cloves
- 1 tsp. honey
- 2 tbsp. pomegranate molasses
- 6 tbsp. olive oil
- Fresh ground black pepper, to taste
To Serve:
- Grilled lemon halves
- Sliced spring onions
- Pomegranate seeds
Preparation
- Evenly scatter the coarse sea salt over the sliced aubergines. Allow to drain for half an hour, over a colander. Rinse and pat dry.
- Place the paste ingredients into the Spice Grinder and blend together.
- Heat the Entertaining Grill to 160˚C.
- Brush the paste over the aubergine and onion, before threading them onto the skewers. Allow three aubergine slices and two onion pieces per skewer.
- Once the grill is ready, place the skewers on and cook for 15 to 20 minutes, turning occasionally to ensure even cooking. Brush with a little more marinade, if they begin to dry out.
- Serve with grilled lemon halves, fresh pomegranate seeds and spring onions.
