Baked Nectarines are a tasty dessert, which are full of flavour and don’t take hours to make. They are also a great way to use up fruit, before it gets too ripe – you can use peaches too.
Ingredients
- 50g pistachio nuts, roughly chopped
- Rosemary leaves, finely chopped
- 4 ripe nectarines, halved with the stone removed
- 200g ricotta cheese
- Clear honey
Preparation
- Line the baking tray with greaseproof paper and lay out the pistachios evenly. Put into the oven, in rack position 2 and set to airfry, at 200˚C, for 2 minutes. Cook until starting to colour.
- Remove from the oven and place the pistachio nuts into a bowl, with the chopped rosemary leaves. Mix together and set aside.
- Place the halved nectarines, with their cut sides facing upwards, onto the greaseproof paper, in the baking tray.
- Set the oven to bake, at 175˚C, for 30 minutes and roast the nectarines until the edges are colouring and the fruit is slightly softened and collapsing. Set aside to cool.
- When ready to serve, place a spoonful of ricotta on top of each nectarine and then drizzle with some honey. Scatter over the pistachio mix.
