Layer cakes can be made with various flavours and in a variety of designs, making them perfect for a special occasion. Try our recipe, combining light and fluffy sponge cake, buttercream and fresh berries for a sweet treat.
Ingredients
- 2x 20cm greased and lined sandwich tins
For the Cake Batter:
- 225g softened butter
- 225g caster sugar
- 4 large eggs, beaten
- 225g self-raising flour, sifted
- 2 level tsp. baking powder, sifted
For the Filling:
- 500ml double cream
- 25g icing sugar, sifted
- 1 tsp. vanilla paste
- 250g fresh mixed berries
Preparation
- Pre-heat the oven to 180˚C / 160˚C / gas 4.
- Place the softened butter into the mixing bowl of the Stand Mixer. Attach the flat mixing paddle and mix on speed 3, for about a minute. You may need to use a spatula to scrap down the sides.
- Add the sugar and increase the speed to 6. Mix for 4 – 5 minutes, until light and fluffy. You many need to scrape down the sides.
- Reduce the speed to 4 and add the beaten eggs, one at a time, beating well after each addition. Add a little flour, if the mixture starts to curdle.
- Add the flour and baking powder and beat until just combined, taking care not to over beat the mixture. Finish mixing with a spatula.
- Spoon the batter evenly between the two sandwich tins and level off.
- Bake for 25 minutes or until the cakes are well risen and a skewer comes out cleanly, when inserted into the centre of the cake.
- Leave to cool in the tins for a few minutes, then turn out and finish cooling on a wire rack.
- When the cakes have cooled, carefully slice one of the cold sponges in half horizontally, with a serrated knife to make 3 sponge layers.
- Using the Cordless Hand Mixer, whip the cream, icing sugar and vanilla paste together, on speed 5, until soft peaks form.
- To assemble, place the bottom layer on a cake stand or plate and spread with a layer of the whipped cream. Place a sponge on top and spread with another layer of cream, before placing the third sponge on top. Cover with the remaining cream and fresh berries.
