Try a new healthier topping on your breakfast pancakes with this fruit and nut twist. Blackberries and pistachios are rich in anti-oxidants and paired with calcium rich Greek yoghurt you'll be ready to start your day!
Ingredients
120g self raising flour, sifted
½ tbsp caster sugar
Pinch of salt
225ml milk
1 medium egg
15g butter, melted
Extra butter to grease the plates
To serve
Maple syrup or honey to drizzle
75g blackberries
30g chopped pistachios
120g greek yoghurt
Preparation
- Open the Cuisinart Griddle & Grill to its flat open position. Attach the flat griddle plates.
- Heat the plates to 180°C.
- Place the self raising flour, salt and sugar into a mixing bowl and mix together.
- Using the 3 in 1 Hand Blender, attach the whisk and in a separate bowl, whisk together the egg and butter. Pour into the flour mixture and whisk together. Gradually add the milk whilst whisking until combined.
- Lightly grease the griddle plates with the extra butter.
- Using 60ml of the mixture per pancake, pour 2 individual pancakes onto each griddle plate, evenly spacing them.
- Cook on one side until browned and then flip over and cook until browned on the other side.
- Repeat with the remaining batter.
- Serve hot, drizzle with maple syrup, scatter over the blackberries and pistachios and serve the greek yoghurt on the side.
