Chicken Liver Pâté

Try a touch of French cooking with this delicious chicken liver pâté recipe, perfect as an impressive homemade starter or why not treat yourself as a lunchtime snack.
Ingredients
- 200g Chicken Livers, cleaned and roughly chopped into 1.5cm pieces
- 100g Soft Butter
- ½ Brown Onion, finely chopped
- 1 Clove of Garlic, crushed
- 1 tsp Fresh Thyme, or a pinch of dried thyme
- ¼ tsp Ground allspice
- Sea Salt and freshly ground pepper
- 1 tbsp Brandy
Preparation
- Set the timer of the Soup Maker Plus to 12 minutes on SAUTÉ. Add a quarter of the butter along with the onion and garlic.
- Allow the onions and garlic to soften in the butter for 5 minutes. Use the ‘SLOW STIR’ button to stir occasionally.
- After the 5 minutes set the Soup Maker to HIGH and add the chicken livers, thyme, allspice and seasoning. Cook for a further 5 minutes, stirring occasionally.
- Pour in the brandy and stir.
- Set the Soup Maker to SIMMER and add the remaining butter. Stir, and allow to gently cook for the remaining time.
- Blend on setting 2 until smooth. Test for seasoning and adjust as desired.
- Spoon the pâté into a suitable bowl and cover with plastic wrap. It will appear runny at first. Refrigerate for at least 3 hours to set.
- Serve with your favourite fresh bread or hot toast and a squeeze of lemon
