Fish Terrine is a delicious light snack, if you’re looking for pescatarian recipes or for a healthier option this summer. It’s simple to make and is a perfect accompaniment with your salad.
Ingredients
- 1 tbsp. pink berries
- 2 tbsp. parsley
- 2 tbsp. dill
- 1 shallot
- 1 egg
- 2 tbsp. double cream
- 30g breadcrumbs
- 100g organic salmon fillet, cooked
- 100g white fish fillet (whiting, pollack), cooked
- Salt
- Paprika
To Serve:
- Choice of sauce
- Salad
Preparation
- Using the mini chopper attachment of the Cordless Pro Hand Blender, blend the pink berries, herbs and shallot for approximately 10 seconds.
- Then add the egg, double cream and breadcrumbs and process for another 10 seconds.
- Add the fish, a little salt and the paprika and blend again for another 5 seconds, to combine the ingredients.
- Grease the terrine and fill with the mixture, to approximately 3 quarters full.
- Bake in a bain-marie, at 180˚C for 30 minutes.
- Leave to cool and remove from the terrine.7. Serve with your choice of sauce and a side salad.
