A tasty seafood dish, which can be created in less than half an hour. Fritto Misto is quick and easy to make and is perfect to be enjoyed as a tasty snack, light lunch or a delicious starter.
Ingredients:
- 60g cornstarch
- 75g plain flour
- 1 tsp. baking powder
- 200ml soda water, chilled
- 125g panko breadcrumbs
- 1 tsp. granulated garlic
- Sea salt & freshly ground black pepper
- 125g squid, sliced into rings
- 125g large prawns, peeled and deveined
- 125g jarred artichoke hearts, drained and quartered
- 1 lemon, thinly sliced
- Olive oil, for spraying
To Serve:
- 1 lemon, cut into wedges
- Basil leaves, torn
- Dipping sauce
Directions:
- To make the batter, combine the cornstarch, plain flour and baking powder in a large bowl. Gradually whisk in the chilled soda water, until you have a smooth, runny batter.
- Combine the panko breadcrumbs, granulated garlic, sea salt and pepper and place in a shallow dish.
- Working with a few pieces at a time, coat the squid, prawns, artichoke hearts and lemon slices in the batter, allowing the excess batter to drain off. Transfer to the panko mixture and coat evenly.
- Place the air fryer basket onto the baking tray. Spread the Fritto Misto evenly in the basket and spray on both sides, with olive oil.
- Put the baking tray into the Air Fryer Mini Oven, in rack position 2. Set the oven to air fry, at 200˚C, for 10 minutes. Turn part way through cooking and continue until they are crispy and a deep golden brown. Repeat until you have cooked all the Fritto Misto.
- Transfer to a platter, garnish with basil and lemon wedges and serve, with your choice of dip.
