Fruit Soda Bread

Ingredients
- 250g plain white flour
- 250g wholemeal flour
- 1 tsp salt
- 1 tsp bicarbonate soda
- 125g sultanas
- 400ml buttermilk
- 1 tsp caster sugar for sprinkling on top
Preparation
- Pre-heat the oven to 200ºC / Fan 190ºC / Gas Mark 6
- Place the flours, salt, bicarbonate of soda and sultanas into the Cuisinart Stand Mixer bowl. Using the dough hook, roughly combine the dry ingredients together on speed 8.
- Pour in the buttermilk and knead on speed 8 until the dough comes together to form a ball.
- Turn out the dough onto a lightly floured work surface and shape into a round loaf.
- Place onto a baking tray lined with baking paper. Using a large knife, score the top of the dough into quarters.
- Sprinkle the top of the dough with caster sugar.
- Bake in the pre-heated oven for 45-50 minutes, until the top of the loaf is golden brown and sounds hollow when tapped on its base.
