Grilled porcini mushrooms are so versatile and make the perfect starter or light bite.
Ingredients
- 300g fresh porcini mushrooms
- 2 smoked bacon slices
- 1 onion
- 1 rosemary sprig
- Salt
For the Marinade:
- 10 tellichery peppercorns
- 10 red Szechuan peppercorns
- 4 juniper berries
- 2 pinches dried red bell pepper
- 1 sprig fresh thyme
- 1 clove garlic,peeled
- 100ml olive oil
Preparation
- Wash the mushrooms and cut in half. Set aside on kitchen paper.
- Slice the onion into rings and separate the rings.
- Add the ingredients for the marinade into the Spice Grinder and blend until smooth.
- Attach the GRILL plates to the Griddle and Grill and preheat to 220 ̊C.
- Baste the mushrooms, with the marinade and place them on the grill. Season and cook for 4 minutes, with the lid closed.
- Set the mushrooms aside and add the onions rings to the grill. Cook for 1 minute, with the lid closed and then set aside.
- Place the bacon slices on the grill and cook for 2 minutes, with the lid closed.
- Dish the porcini mushrooms out onto two plates. Then add the onion rings and grilled bacon.
- Garnish with rosemary and any remaining marinade, before serving
