Grilled Salmon with Grilled Tomatoes & Potatoes

Grilled Salmon is high in omega-3 and is easy to make. This simple recipe makes an ideal mid-week dinner and can be ready in less than half an hour.
Ingredients
- 500g new potatoes, pre-cooked and finely sliced
- 240g mixed cherry tomatoes on the vine
- 2-3 sprigs fresh thyme
- Sea salt & freshly ground black pepper
- Juice ½ lemon
- Olive oil
- 3-4 salmon fillets
Preparation
- Place the sliced potatoes, tomatoes and thyme on the baking tray. Season with salt and pepper and drizzle over the olive oil and lemon juice.
- Place the baking tray into the oven, on rack position 2. Set to grill at 210˚C, for 15 minutes. Grill until the vegetables are starting to colour.
- Rub each salmon fillet with olive oil and season.
- Remove the baking tray from the oven and turn over the vegetables. Add the salmon fillets to the baking tray, amongst the vegetables and grill for a further 10 - 12 minutes. Cook until the salmon is opaque and the vegetables are coloured and starting to crisp slightly.
- Serve the salmon with the grilled vegetables and a squeeze of lemon juice.
