Grilled Cheese & Tomato Sandwich

This classic grilled sandwich, using tomatoes, cheese and peppers, is quick and easy to make and is ideal for a light lunch. It’s also a great vegetarian option too.
Ingredients
- 1 large red pepper
- Olive oil
- 1 ciabatta, sliced in half lengthways
- 2 tomatoes, sliced
- 1 mozzarella ball, sliced
- Basil leaves
Preparation
- Attach the GRILL plates to the 2 in 1 Grill and Sandwich Maker. Preheat to MEDIUM -HIGH.
- Remove the stem and seeds from the pepper and cut into quarters. Brush with olive oil.
- When the 2 in 1 Grill and Sandwich Maker is up to temperature, place the pepper onto the grill plates. Close the lid and grill for approximately 4 –5 minutes, until the skin starts to blacken and blister. Remove from the heat and allow to cool for a minute. If you like the skin removed, then gently peel off.
- Take the bottom half of the ciabatta and layer on the tomatoes, mozzarella, grilled pepper and basil. Place the top half of the ciabatta on.
- Place the sandwich onto grill and gently close the lid. Cook for 5 minutes on MEDIUM –HIGH or until the bread starts to crisp and the mozzarella oozes out.
- Remove from the grill and serve
