Homemade Gelato

Gelato is a traditional Italian dessert, made using milk, cream and sugar. Following our simple recipe and adding a variety of toppings, you can create your own Gelato easily at home. Recipe created by @thehonestdad.
Ingredients:
- 250ml double cream
- 750ml full fat milk
- 175g granulated sugar
- 2 tbsp. corn starch
- Pinch of salt
- ½ tbsp. vanilla extract
- 1 tbsp. liquid pectin
Topping Suggestions:
- Cookies, crumbled
- Chocolate chunks, broken up
- Sprinkles
- Chocolate spread
- Strawberry sauce
- Smarties
Directions:
- In a saucepan, over a medium heat, combine the cream and 500ml of the milk and bring to a simmer.
- Using the Cordless Pro Hand Blender, with the whisk attachment, whisk the remaining milk, sugar, corn starch, salt and vanilla extract in a bowl.
- One the milk and cream mixture has come to a simmer, add the milk and sugar mixture to the saucepan.
- Stir in the pectin and whisk again, until completely smooth. Cool to room temperature, then cover and refrigerate for at least 2 hours, preferably overnight.
- Once chilled, whisk the mixture and pour into the Ice Cream & Gelato Professional, with the gelato paddle fitted. Place the lid on and set the timer for 40 minutes and start to churn.
- With 5 minutes remaining on the timer, add some of your chosen toppings.
- At the end of churning, the gelato will be soft scoop. If you want a firmer gelato, place in an airtight container and chill in the fridge for several hours.
- Serve with more of your chosen toppings.
