Mixed Seed Soda Bread

Mixed Seed Soda Bread, infused with orange zest, is easy to make and is the perfect treat to have with your morning coffee or tea.
Ingredients
- 450g plain flour
- 2 tbsp. sunflower seeds
- 1 tbsp. sesame seeds
- 2 tbsp. poppy seeds
- 2 tbsp. soft brown sugar
- 1 tbsp. freshly grated orange zest
- 1 heaped tsp. bicarbonate of soda
- 1 heaped tsp. cream of tartar
- 1 tsp. salt
- 500ml buttermilk
- Melted butter for brushing the top
Preparation
- Preheat the oven to 200 ̊C / 190 ̊F / gas mark 6. Line a loaf tin with greaseproof paper.
- Sift the flour into a large bowl, before adding the rest of the dry ingredients. Using your hand mixer, on a low speed, gently mix your dry ingredients together. Make a well in the centre and pour in the buttermilk. Gently mix on a low setting to bring everything together, to form a soft dough. Take care not to over mix.
- Place the dough into the prepared loaf tin and spread evenly. Brush the top with the melted butter.
- Place in the oven and bake for 30 minutes, before turning down to 150 ̊C / 140 ̊F / gas mark 2 for a further 15 minutes, or until a skewer inserted into the loaf comes out clean.
- Allow to cool for a couple of minutes, before turning out onto a wire rack.
- Serve warm, spread with butter.
