Pesto is a tasty sauce or dip, made from fresh basil, garlic and pine nut. It pairs perfectly with pasta, chicken, fish and salads and is super simple to make.
Ingredients
- 40g fresh basil
- 125ml olive oil
- 30g pine nuts, lightly toasted
- 1 clove garlic
- Sea salt
- 50g parmesan, grated
Preparation
- Place the basil leaves, olive oil, pine nuts, garlic and salt into the bowl of your food processor. Process until you have a rough paste.
- Add the parmesan and pulse, until the mixture is well blended, but still has some texture.
- If not using straight away, transfer the pesto to an airtight container and drizzle a little more olive oil on top.
Note: The pesto will keep in the refrigerator for up to a week or frozen for up to a month.
