Prosciutto & Fig Pizza

Makes 2 pizzas

Nothing beats homemade pizza! It’s easy to make and a great way to get the kids involved with dinner. With a range of toppings, this Prosciutto and Fig Pizza is perfect to be enjoyed as a mid-week dinner or a weekend treat.

Ingredients

  • 2 pizza bases – approx. 25cm in diameter
  • 4 tbsp. passata
  • 2 tbsp. olive oil
  • 6 slices prosciutto
  • Fig jam
  • 2 figs, finely sliced
  • 125g buffalo mozzarella, torn into pieces
  • Flour for dusting baking tray

To Serve:

  • 50g rocket
  • Handful of torn basil leaves

Preparation

  1. Set the oven to roasts & pizzas at 230˚C. Allow to preheat for 10-15 minutes.
  2. Dust the baking tray with a little flour. Place the rolled-out pizza base onto the baking tray.
  3. Evenly spread a thin layer of tomato sauce over the base, leaving a 2cm border for the crust. Place on the toppings, taking care not to over fill the pizza.
  4. Put the baking tray into rack position 1. Bake for 8 to 10 minutes, until the cheese has melted, and the bottom crust is golden brown and crispy.
  5. Repeat with the second pizza base.
  6. Serve, topped with rocket leaves and torn basil.
