Red Pepper Hummus

This easy roasted red pepper hummus is smooth and creamy, full of flavour and only takes a few minutes to make. Ideal for serving with your favourite bread, crudités or tortilla chips.
Ingredients:
- 400g tin of chickpeas, drained & reserved
- 2roasted red peppers from a jar, approx. 200g, roughly chopped
- 1 large clove garlic, peeled
- 2 tbsp. tahini paste
- Juice½ lemon
- 3 tbsp. olive oil
- 1tsp.paprika
- 2 tbsp. chickpea water
Directions:
- Add all the ingredients into the Cuisinart Mini Prep Pro.
- Using the CHOP button, blend until smooth. Check for seasoning.
- Serve immediately or cover and refrigerate for up to 3 days
