Roasted Vegetables

Roasted Vegetables are simple and take very little time to prepare. Packed full of delicious flavours, they can be served as a side dish or as a healthy snack.
Ingredients:
- 300g carrots
- 150g parsnip
- 1 tbsp. olive oil
- Sea salt
Directions:
- Cut the carrots and parsnips into rough batons, approximately 10cm in length. Toss the vegetables with the oil and sprinkle with sea salt.
- Place the vegetables, in an even layer, on the baking tray and put into rack position 2. Set to roasts & pizzas, at 160˚C, for 25 minutes. Check the vegetables occasionally, turning if necessary. Cook until they are starting to crisp and colour.
- Serve with a dipping sauce.
