Rolled Lemon Sole with Courgette

This rolled lemon sole is a super simple, 20 minute meal idea. It takes less than 10 minutes to prep and is cooked to perfection in our Professional Cookfresh Glass Steamer, ideal for a midweek meal.

Ingredients

  • 4 skinless lemon sole fillets, (approximately 900g)
  • 100g courgette, coarsely grated
  • 2 anchovy fillets, finely chopped
  • 1 tbsp parsley, finely chopped
  • 1 tbsp sherry vinegar
  • 1 tbsp olive oil
  • ½ red chilli, finely chopped
  • ½ tsp caster sugar
  • Salt & freshly ground pepper
  • Paprika
  • 4 slices of lemon
  • 4 sprigs of dill
  • Skewers

Preparation

  1. In a small bowl combine the courgette, anchovies, parsley, sherry vinegar, olive oil, red chilli, sugar, salt and pepper.
  2. Spread the courgette mixture onto the sole fillets and roll tightly, securing with skewers.
  3. Sprinkle the sole with paprika and place a slice of lemon on top of each roll.
  4. Evenly space the rolled sole into the steamer.
  5. Set the timer for 10 minutes, secure the steamer lid and press start.
  6. At the end of the steaming time allow to rest for 1 minute.
  7. Garnish with a sprig of dill and serve with wilted spinach.
