Salsa Verde

Vibrant and fresh, this homemade salsa verde is quick and easy to make and takes less than 5 minutes to blitz in a mini chopper. This herby green sauce tastes delicious with everything from grilled fish and vegetables to a roast chicken or lamb.
Ingredients:
- Small handful flat-leaf parsley (approx 10g)
- Small handful fresh basil (approx 5g)
- Small handful fresh fresh mint (approx 5g)
- 1 small garlic clove, peeled
- 10g capers
- 10g small gherkins, rinsed
- 1 anchovy fillet
- ½ tbsp lemon juice
- 30ml extra virgin olive oil
Directions:
- Place all the herbs into a Spice Grinder or Mini Chopper, followed by the remaining ingredients.
- Process until you have a thick sauce.
- Serve with fish, roasted vegetables or pasta.
