Easy to make and full of protein, this smoked salmon omelette is perfect for a special breakfast or a quick and healthy, light lunch option.
Ingredients
- 4 large eggs
- Salt and ground black pepper
- Handful of chopped parsley
- 20g butter
- 60g cheddar cheese, grated
- 60g smoked salmon
- 2 spring onions, sliced
- Handful of chopped chives (optional)
Preparation
- Attach the SANDWICH plates to the 2 in 1 Grill and Sandwich Maker. Preheat to HIGH.
- Beat the eggs and salt and pepper in a bowl. Add the parsley and beat really well (the more you beat, the more air you get into the omelette).
- Melt the butter in each pocket of the Sandwich Maker and rub a little of the melted butter onto the top plates.
- Pour the egg mixture into each pocket, just to the top of the pocket.
- Divide the smoked salmon between each omelette, followed by the grated cheese and spring onions.
- Close the lid and cook for 3 to 4 minutes.
- Serve scattered with chopped chives.
