Steamed Mackerel and Fennel

Mackerel is a great source of Omega-3 oils and tastes delicious with fresh oranges. So if you're on a health kick, or just want some delicious dinner, this recipe is perfect for you!
Ingredients
- 6 mackerel fillets
- 2 fennel bulbs, chopped
- 3 oranges
- 1 piece of ginger, grated
- 1 tsp. pink berries
- 300ml white wine
- 50ml olive oil
- Salt & freshly ground pepper
Preparation
- Grate the zest of 2 oranges and set aside.
- Peel the oranges and remove the segments.
- Add the chopped fennel to the dish of the CookFresh Steamer, before adding the orange zest, pink berries and grated ginger.
- Place the mackerel fillets on top of the fennel and drizzle with olive oil.
- Season well with salt and pepper.
- Add the white wine to the water tank and cook for 5 minutes, using the ‘fish’ mode.
- Add in the orange wedges and drizzle with a little more olive oil.
- Serve immediately.
