Tropical Overnight Oats is a great, healthy breakfast, which can be prepped the night before. Delicious with fresh fruit but can be made using any topping you fancy.
Ingredients
- 50g ripe banana, roughly chopped
- 50g ripe mango, roughly chopped
- 50g tinned or fresh pineapple, roughly chopped
- ½ tsp. chia seeds
- Juice of ½ lime
- 1 tbsp. maple syrup
- ½ cup full fat coconut milk
- ½ cup thick plain yoghurt or plant based yoghurt
- ½ cup rolled oats
To Serve:
- Coconut shavings
Preparation
- Place all the ingredients, except for the oats, into the blending cup. Secure the lid and blend until you have a smooth consistency.
- Add the oats and blend briefly, ensuring some texture of the oats remains.
- Refrigerate overnight.
- Serve topped with coconut shavings.
