Try this warming Vegetable Soup recipe, to create a delicious, quick and easy lunch or supper. It can be ready in about half an hour and is a great way of using up any leftover veg you have at home.
Ingredients
- 1kg mixed vegetables (such as pumpkin, turnip, courgette, carrot and onion), peeled, topped and tailed and cut to fit the feed tube
- 4 tbsp. olive oil
- 2 garlic cloves, crushed
- 4 sprigs thyme
- 1 litre chicken or vegetable stock
- Salt and black pepper
To Serve:
- Crème fraiche
- Crusty bread
Preparation
- Using the Expert Prep Pro, set up the large work bowl with the dicing grid and disc.
- With the processor on high, dice the vegetables.
- Add the olive oil to a large, deep sided pan and gently sauté the garlic.
- Add the diced vegetables and thyme. Continue to sauté for 10 minutes, until the vegetables begin to soften.
- Add the stock and bring to the boil. Turn down to simmer for 10 minutes or until the vegetables are cooked through.
- Allow to cool slightly. Using the Cordless Pro Hand Blender, with the blending attachment, blend the soup until it has a smooth consistency. Adjust the seasoning to taste.
- Serve with crusty bread and crème fraiche.
