Cajun Spiced Cauliflower Steaks

Cauliflower steaks are hearty and satisfying and make a great alternative to meat steaks. Grill them with seasonings like this simple Cajun spice blend and serve with yoghurt dressing and steamed greens.
Ingredients
For the spice mixture
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1 tsp dried oregano
- 1 tsp smoked paprika
- ½ tsp cayenne pepper
- 4 tbsp olive oil
- Salt and pepper for seasoning
- 4 medium cauliflower steaks and young inner leaves
For the yogurt dressing
- 100ml plain yogurt
- 30ml milk
- Juice of ½ a lemon
- Salt
To serve
- Steamed tender stem broccoli
- Steamed fresh green beans
Preparation
- Heat the Griddle & Grill to 200ºc.
- In a small bowl combine the spices and olive oil together. Season to taste.
- Brush the cauliflower steaks with the spiced oil mixture.
- Make the yogurt dressing by combining the yogurt, milk and lemon juice. Season to taste.
- Grill your spiced cauliflower steaks and young leaves for 5-10 minutes, with the lid closed. Part way through the cooking time open the grill and splash the cauliflower steaks with a little water.
- The cauliflower steaks are ready when they begin to char outside and soften inside.
- Serve drizzled with the yogurt dressing and steamed broccoli stems and beans.
